For simplicity and to help you recollect, we're now naming em! The 5th rendition of our SMaSH is fortified with Centennial hops and Pilsner malt. It was so delicious it's gone! Notes of pineapple and tropical fruit, bright and crisp.

Munich & Amarillo
With the forth installment in our SMaSH series, Munich imparts a deep orange hue with a strong malt body. Amarillo lends aromas of grapefruit, orange, lemon, melon, apricot, and peach with a pleasant, tame bitterness.

The third installment of our Single Malt and Single Hop series highlights German Pilsner Malt and Washington State grown Columbus hops. The Pilsner provides a bright, straw colored beer, perfectly white head, and a faint malt presence, while Columbus hops lend flavors and aromas of peppercorn and grapefruit.

munich & Citra
SMaSH stands for a Single Malt and Single Hop beer. This style is fantastic in showcasing two separate ingredients in beer. One malt allows you to truly see what it is all about; the color, flavor, sweetness, mouthfeel, head retention, and aroma. With hundreds of different hop varieties around the world, brewing a SMaSH beer is an excellent way to allow the unique flavors and aromas of one single hop to take the spotlight. Second version in our SMaSH series features Munich malt and Citra hops. Munich gives this beer a rich malt profile, while Citra imparts flavors of grapefruit, melon, lime, gooseberry, passion fruit and lychee.

Steej-ee-uh-n: Dark, gloomy, infernal, relating to the river Styx. However, there’s no reason to fear this beer. Within its deep ruby-brown color hides intense flavors of dark fruit and tartness. Saisons don’t always need to be bright and bubbly and Stygian is a perfect example of breaking the style barrier. The highlight of this Saison is our specialty Saison yeast strain which imparts a slightly dry acidity that balances the deep flavor and complex body.

For some, there’s nothing more experimental than your first year at college. Let’s be honest, things can get weird, and Freshman Year IPA is a testament to just that. A simple malt bill allows two newer experimental hop varieties show off their goods. Between the two you will find herbal, minty, tea-like, and faint tropical flavors. Another newer variety is used for a dry hop and imparts intense apple and pear aromas. This beer is very different from the norm and we really had fun brewing it. Come on down to the tap room and grab a pint before its gone.

Nubz' Dank Nugz
Our head brewer has acquired the nickname of 'NUBZ' over the years because of his lack of finger tips. His love of IPA's and the endless combination of hop additions is what brings this beer to life. Juicy, just juicy. This brew is dry and crisp all while packing a severe hop punch consisting of lemon, passion fruit, pine, and beery flavors as well as prominent floral and herbal aromas. Hop lovers rejoice.

COFFEE INFUSED PRE-PROHIBITION PORTER
We took our beloved Pre-Prohibition Porter, Trackdown and infused it with Chameleon Cold-Brew Coffee. The result is an easy drinking, light bodied Porter with the added caffeine kick of cold-brew coffee. Try it in a flight side by side with Trackdown!

Hailing from Boston, our head brewer wanted to make a beer to commemorate St. Patrick's Day. Southie is a traditional Irish Dry Stout that is dark and roasty with a smooth finish. Sláinte!

I DONUT CARE
LEMON LEMON LEMON! We had so much fun with Donut Dunker we decided to do it again. Lemon filled donuts, Lemondrop hops, and lemon zest all introduce an incredibly citrusy aroma and flavor to this softly bittered IPA. “But Scott, don’t you think it’s a bit weird to brew an IPA with lemon filled donuts?” I donut care.
Chocolate frosted donuts and a creamy, smooth stout… who can think of a better combination? We couldn’t, so that’s why we decided to create this brew with not only donuts in mind, but with donuts in the mash. Heaps of Round Rock Donut chocolate frosted donuts were mixed right in with our grain to create something that is truly a liquid dessert.
Regis would approve. This Rye IPA is deep in color and complexity. The rye is balanced by the use of Carared and chocolate malts leaving you with a perfect base of spice and earthiness. Motueka hops compliment the spice with hints of fresh zested citrus, whereas Azzaca hops are used to compliment the earthiness by contributing flavors and aromas of orchid fruits.

Just like your childhood toy, this Witbier is bright and colorful. This traditional Belgian wheat based beer showcases sweet orange peel and coriander with a nice bubblegum aroma. A perfect hot summer day beer!

Belgian style table bier
A classic Belgian style ale which is low in abv, light in body, showcases local fruits and has a slight tartness on the back end. Table Bier is a light, easy drinking ale, perfect for hot summer days.

Toledo window box

The name Toledo Window Box refers to a report George Carlin read stating that the chief of police of Toledo, Ohio had gone to see a viewing of Reefer Madness and a training session by the FBI. Afterwards he made the statement that "You can grow enough marijuana in an average window box to drive the entire population of Toledo stark, raving mad". Carlin then stated that he wanted one of those Toledo Window Boxes. This Imperial Pale Ale is our homage to Carlin and his Toledo Window Box.

extra red ale
This is our twist on traditional Irish Red style ale. A slightly higher ABV lay the groundwork for a generous dosing of nugget and comet hops to impart an earthy and herbal goodness up front. A slight hint of citrus balances the caramel & toffee sweetness of the rich malts used to obtain the deep ruby red color of this ale.

In German Folklore, a Weizengeister is a wheat spirit that takes the shape of various animals to search out grain or lost children. This Dunkelweizen was brewed with dark grains along with wheat to bring out a complex chocolate and nutty flavor. The nose is dominated by cloves & spice with hints of banana from the Bavarian Weizen yeast and the noble hops. A slight twist on a German classic, this beer is refreshingly complex and mysterious.

BELGIAN TABLE BIER
A fruity twist to our original Table Bier. This slightly tart & refreshing Belgian style ale features Passion Fruit, Mango and Pineapple.

The Golden OnE
Saisons are a beautiful window into the old world and the beers that were drank at the time, and dry hopping is just awesome. Especially when it’s done with boatloads of El Dorado. This particular Belgian yeast blend lends to a subtle tartness and fruity characteristics that play well with the tropical flavors and stone fruit aromas of El Dorado. German malts bring a deep golden, hazy color and stay true to traditional styles.

Run to the Helles
It's all about the treatment of your yeast when it comes to Lagers. The Marzen yeast strain used in this brew goes through multiple different temperature changes to ensure a super clean flavor with no undesirable off-flavors. Lagered for over two months, Run to the Helles, is a bright, clean, and crisp. With Munich being the predominant malt, slightly sweet flavors and a light reddish-orange hue power through with the hop presence there strictly to compliment the grain. All that's left to say is, "run to the hills. Run for your lives."

White Wheat IPA
This is not your typical White IPA. No fruits or spices were added in the brewing process, just the addition of Lemondrop and Hull Melon hops. The slight haze and smoothness of flaked and malted wheat provides the backbone for tons of lemon and citrus aromas with slight honeydew and strawberry tones. This is the perfect beer for both hop lovers and someone who just wants to enjoy a refreshing pint as this Texas weather warms up.

blossom & blade
Spring is a time for fresh starts, growth, and Blossom & Blade. This Pale Ale stands alone with two different styles of oats, tons of malted wheat, orange blossom honey, and heaps of Lemondrop hops. A silky-smooth body opens up a bright flavor full of lemon and citrus that is almost too easy to drink. A clean finish and perfectly white, fluffy head last until the last sip making it easy to grab another pint.

double milkshake IPA
Our experimental double IPA has an interesting mix of Oats, Wheat malts and lactose. This combination allows Protocol Zero to have a smooth, thick body with an intense fruity aroma with a soft bitterness coming from Bravo, Mosaic and Galaxy hops. Gerald Broflovski, we know who you are.

I am to misbehave
This beer was made to honor Captain Malcolm Reynolds and the crew of the Serenity. Azacca and Calypso hops contribute a nose of apple, pear, and tropical fruits. A hefty grain billand long boil add a complex malt profile with caramel, honey tobacco, and toffee being prevalent. A big beer for big personalities, it reminds us when we are faced with adversity, misbehaving is the only option.

crystal space devil
This is a dangerously drinkable double IPA, with Chinook & Cascade doing the bittering, while Crystal hops are showcased late in the boil and dry-hopping. The result is an IPA with a woody, green aroma finishing with a slight candy sweetness from the malts.
